How do you process plums for canning?
Hot Pack
- Bring your canning liquid (water, syrup or juice) to a boil.
- Quickly add plums in and return to boil for 2 minutes.
- Turn off the heat and put the lid on the pot.
- Allow your plums to sit for 20-30 minutes or so, which will help them heat through slowly.
- Immediately pack your boiled plums into canning jars.
How long does canned plum sauce last?
Store in the fridge in an airtight non-reactive container. Will keep for up to 2 weeks. OPTIONAL CANNING INSTRUCTIONS: Ladle the hot plum sauce into sterilized jars, seal with the lids and process in a boiling water canner for 15 minutes.
