Do Nords hate Elves?
Most Nords hate elves though, particularly the High Elves, because of the recent war the empire lost against them. Due to this loss, the Aldmeri Domion now controls the Empire, and has imposed a ban on the Worship of Talos. Not only that, the Nords warred against the Snow Elves when they settled northern Tamriel.
Do Redguards like Nords?
Most of this hatred takes place in the Old Holds, and Stormcloak territory. i’ve noticed no particular hostility to bretons, redguards, bosmer and orcs. they hate all the other races. It depends on the Nord.
Can you join the Stormcloaks as a dark elf?
Yes. This is a standard tool of both statecraft and in popular revolutions throughout history. But that aside, there is a definite motivation for a Dunmer joining the Stormcloaks regardless of their possible racism.

There is no canon on that yet. But if i had to put a chance on it, i would say that probably 60% likely that the official lore says that it isn´t clear and something happens that essentially renders the choice pointless, 25% chance that the Dragonborn joined the Stormcloaks and 15% chance s/he joined the empire.

The race that the Nords hate the most are the Dark Elves. They dislike elves in general, and they dislike high elves (thalmor) more than wood elves (which are barely seen).
